CHANDON Chant Des Cigales – an organic sparkling wine available from early April 2022.
CHANDON Chant des Cigales is an organic sparkling wine made with certified organic grapes grown in Southern France’s Côtes de Provence Region.
Chandon’s very first organic sparkling wine was crafted by Audrey Bourgeois, CHANDON’s head of winemaking innovation and technical co-ordination, under the mentorship of Richard Geoffroy, an ex-chef de caves at Dom Pérignon and Eric Lebel, a chef de caves at Krug.
A blend of eight emblematic grape varieties adds a bracing minerality along with further floral aromas and elevating the wine into a heady new aromatic dimension. It has the presence and balance of a still wine, with the texture of a sparkling wine.
Adding an ice cube gives you a new taste experience as well.
Considering environmental issues, we have succeeded in making the bottle weight 30% lighter than a regular sparkling wine bottle.
For Chant des Cigales, we trialed both the traditional and the Charmet methods. Preserving the wine’s primary fruit character and freshness, rather than weighing it down with secondary autolytic flavors, was vitally important.

【How to enjoy CHANDON Chant des Cigales】
Taste CHANDON Chant des Cigales chilled to 10˚C, and you’ll experience a persistent yet subtle effervescence that tickles and excites the palate. Note the moderate acidity and the primary fruit aromas, aromatic and complex.
Then try adding one ice cube, and prepare to be astonished. The effervescence is revived. The flavor profile shifts subtly, releasing a bracing minerality along with further floral aromas and elevating the wine into a heady new aromatic dimension.
Ice is usually suggested only for sweet wines, the ripe fruitiness and aromatic complexity of Chant des Cigales make ice its fresh, surprising ally. That’s why adding an ice cube is positively encouraged. And it’s another reason why CHANDON Chant des Cigales is a new taste experience.

■Comment from Dom Pérignon Cellar Master Vincent Chaperon.
“Dom Pérignon and refined gastronomy have a mutually inspiring and elevating relationship. I’ve had the pleasure of working with Chef Natsuko Shoji for the past two years, and I’ve been continually impressed by her deep love for Dom Pérignon, her unique personality, artistic sense, creativity, and above all, her humanity. She also demonstrates a thoughtful approach to passing on her legacy to the next generation through meaningful dialogue with others. I am truly looking forward to continuing our journey together. ”Dom Pérignon and refined gastronomy have a relationship of mutual inspiration and enhancement. “Dom Pérignon is a truly special champagne to me. As it is often called ‘the art of time,’ it is not swayed by fleeting trends, but is crafted with a long-term perspective, maintaining its singular taste to this day. Remarkably, about 1% of the grapes used still come from the vineyards cultivated by Dom Pierre Pérignon himself since 1668, preserving the origin at its core. I see it as a true piece of art that carries his DNA. It is an incredible honor to collaborate with Dom Pérignon.”
